An unforeseen talent for cooking in school first led Nick down the path to becoming a chef. With nearly 28 years’ experience and a number of accolades under his belt, this award-winning chef’s passion is unwavering.

 

Now chef-proprietor of the Heron Inn, which he runs alongside his wife Amanda and their dedicated team, Nick focuses on serving up crowd-pleasing modern takes on Cornish classics with an emphasis on local seafood from Tresillian River.

Instead of employing experienced chefs, Nick gives ambitious young people the opportunity to get fantastic one-to-one training and further their knowledge through an apprenticeship scheme. With classical training and a passion for food, Nick trains his team of young chefs to refer to tried-and-tested French techniques at the same time as cultivating their own creative flair.
